Thai Sweet Potato Bisque

How to Make:

  1. Bring 3 C of water + 4 C chicken, vegetable broth or bouillon to a boil.
  2. Add sweet potato & seasoning/vegetable packet.Bring to a boil, lower heat to a simmer and cook for 20 minutes. Add 1 can coconut milk. Add juice of 1 lime. Stir.
  3. Working in batches, pour 1/3 soup into blender and puree. Repeat for the rest of the soup. For a thinner soup add more broth.

Add hot sauce or cayenne for more heat

SERVE with SALT & PEPPER TO TASTE.

Other suggestions . . . just before serving:

  • Just before serving add diced cooked shrimp or chicken
  • Garnish with cilantro or scallion greens
  • Serve with lime wedges
  • Top with chopped cashews or peanuts or coconut
